L’Ermita comes from a dramatic, terraced single vineyard perched high on Priorat’s steep slopes near Gratallops, rooted in the region’s iconic llicorella slate. These poor, rocky soils and low-yielding, old vines—dominated by Garnacha with a small proportion of Carinyena and, in some vintages, a touch of local white varieties—naturally produce tiny quantities of intensely flavored grapes. All work in the vineyard is done by hand (often by mule on the steepest terraces), following organic and biodynamic principles, with extremely careful selection at harvest to ensure only the healthiest, perfectly ripe bunches are used. In the cellar, fermentation is typically carried out in small vats with gentle extraction to preserve purity and finesse, followed by aging in high-quality French oak barrels. The aim is to express the personality of the vineyard rather than the hand of the winemaker, resulting in a wine of precision, depth, and remarkable elegance.
