Production
Acrobat sources fruit from carefully selected sites throughout Oregon, drawing on a range of cool-climate vineyards influenced by maritime breezes, well-drained volcanic and sedimentary soils, and significant diurnal temperature swings. Grapes are typically harvested at night or in the cool early morning to preserve freshness and aromatic complexity. After sorting, the fruit is gently destemmed and fermented in stainless steel, often with temperature control to retain delicate Pinot aromatics. Aging takes place in a mix of stainless steel and neutral to lightly toasted oak, striking a balance between vibrant fruit character and subtle structure without heavy oak influence.
