The 2022 Weingut Wittmann Gundersheimer Riesling Aus Ersten Lagen BIO is a poised, terroir-driven dry Riesling from one of Rheinhessen’s most sought-after estates. Drawn from certified biodynamic “Erste Lage” sites bordering the famous Morstein GG vineyard, it offers serious depth and mineral precision without losing drinkability. Conceived as a bridge between estate Riesling and Grosses Gewächs, it showcases Wittmann’s uncompromising focus on quality over volume and the finesse that has made the estate so highly acclaimed.
Tasting Notes
In the glass, this wine shows a pale straw to light lemon colour with a subtle green shimmer, signalling youthful freshness. The nose is immediately inviting and quite open, with vibrant aromas of citrus zest, lime and white peach, layered over crushed stone, chalk, and a saline, almost sea-breeze minerality. Hints of green apple, delicate floral notes, and a touch of herbal spice add complexity and lift.
On the palate, Gundersheimer is precise and elegant rather than opulent, especially by Rheinhessen standards. It is dry, linear and finely etched, with a firm mineral spine from the limestone soils. Juicy citrus and stone-fruit flavours are wrapped around a core of chalky, salty tension, while fine-grained tannins and racy acidity give structure and length. The finish is long, salty and mouth-watering, leaving a lingering impression of purity and energy. Already very attractive and approachable in its youth, it has the concentration, acidity and extract to evolve beautifully for at least 8–10 years, gaining further complexity and textural nuance.
Production
The grapes for this wine come from Gundersheim vineyards classified as “Erste Lage,” with deep, limestone-rich soils that impart both clarity and a pronounced mineral character. Wittmann farms these parcels according to strict biodynamic principles, focusing on low yields and meticulous selection in the vineyard to ensure only perfectly ripe, healthy fruit is harvested—typically by hand. In the cellar, Philipp Wittmann follows a minimalist philosophy: gentle pressing, spontaneous fermentation with indigenous yeasts, and extended maturation on the lees in traditional wooden casks. This slow, unforced vinification under stable temperature and humidity in the historic vaulted cellars allows the wine to develop its precision, texture and signature salty length without excessive intervention.

This dry, mineral Riesling is a versatile food partner, shining with refined dishes that echo its freshness and precision. Think oysters and other shellfish, ceviche, sashimi and lightly grilled fish, as well as fine poultry, veal schnitzel, or vegetable-based dishes with asparagus, fennel or fresh herbs. It also pairs beautifully with mildly spicy Asian cuisine, particularly sushi, Thai or Vietnamese dishes with citrus and ginger elements. Serve well chilled but not icy, ideally at 8–10°C, to allow the aromatics and texture to unfold. A brief 30-minute decant in its youth can help the wine open up, but it is not strictly necessary; with bottle age, a gentle decanting to separate any sediment will be beneficial.

Weingut Wittmann is based in Westhofen in Rheinhessen, where the Wittmann family has been growing wine since the 17th century—over 15 generations and around 350 vintages of accumulated experience. Today, under the guidance of winemaker Philipp Wittmann, the estate is regarded as one of Germany’s leading biodynamic producers, known for razor-sharp, terroir-expressive Rieslings from top sites such as Morstein, Kirchspiel and Brunnenhäuschen. The wines mature in a historic vaulted cellar built in 1829, in around 80 traditional wooden casks, the oldest dating back to 1890, each barrel holding the harvest of a single parcel. Wittmann’s commitment to low yields, meticulous vineyard work and patient, slow élevage has earned the estate top scores from international critics and a benchmark status within Rheinhessen and the broader German fine wine landscape.
