Production
Ornellaia is born from vineyards set on the sun-drenched, breezy slopes of Bolgheri, just a few kilometers from the Tyrrhenian Sea. Here, a mosaic of soils—ranging from sandy and alluvial to clay and limestone—provides ideal conditions for Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot, which typically form the core of the blend. The grapes are harvested parcel by parcel, often by hand, with strict selection in the vineyard and at the sorting table to ensure only perfectly ripe, healthy fruit is used. Fermentation usually takes place in temperature-controlled stainless steel or concrete tanks, followed by maceration tailored to each parcel to extract color, aroma and structure without harshness. The wine is then matured in French oak barriques (a significant proportion new) in Ornellaia’s cellars, where each lot is aged separately before the final blend is created and further refined in bottle prior to release.
