Tasting Notes
In the glass, it presents a clear, focused profile with a bright, clean appearance. The nose opens with lime, green apple, and fresh herbs, layered with subtle yeasty spice from extended lees ageing. On the palate, the wine is tense and mineral, with lively acidity and a distinct saline freshness that gives it both energy and structure. The finish is long, precise, and refined. While it is already highly enjoyable, its firm shape and depth suggest it will hold well over the next few years.

Production
The grapes come from the Bechtolsheimer Sonnenberg in Wonnegau, where limestone-rich soils and an even microclimate help preserve freshness and bring definition to the wine. The fruit was harvested by hand and gently pressed in a basket press, then fermented spontaneously in a 300-liter oak cask. It matured for 20 months on full and fine lees and was bottled unfiltered with minimal added sulfur to preserve purity and site expression.

A versatile food wine, this Silvaner works beautifully with light starters, grilled fish, vegetable dishes, Asian cuisine, or delicate white meats. Serve it well chilled at around 8-10°C; decanting is usually not necessary, though a short aeration can help the wine open up if enjoyed young.
