The vineyard is known for its well-drained, loamy soils and sustainably farmed blocks, with meticulous viticulture and low yields to maximize flavor intensity. Grapes are typically harvested in the cool of the night to preserve freshness, then whole-cluster pressed. Fermentation takes place primarily in oak barrels (including a significant portion of new French oak), often with native yeasts, to build texture and complexity. Uniquely, Shafer forgoes malolactic fermentation for this wine, preserving vibrant acidity and a more citrus-driven profile while bâtonnage (lees stirring) enhances creaminess and depth.
