Red Shoulder Ranch is located in the Carneros subregion of Napa Valley, where cool maritime influences from San Pablo Bay foster a long growing season ideal for Chardonnay. The vineyard is known for its well-drained, loamy soils and sustainably farmed blocks, with meticulous viticulture and low yields to maximize flavor intensity. Grapes are typically harvested in the cool of the night to preserve freshness, then whole-cluster pressed. Fermentation takes place primarily in oak barrels (including a significant portion of new French oak), often with native yeasts, to build texture and complexity. Uniquely, Shafer forgoes malolactic fermentation for this wine, preserving vibrant acidity and a more citrus-driven profile while bâtonnage (lees stirring) enhances creaminess and depth.

This Chardonnay’s combination of richness and freshness makes it an excellent partner for a range of refined dishes. It pairs beautifully with butter-poached lobster, seared scallops, roast chicken with herbs, creamy pasta with wild mushrooms, or richer seafood preparations such as halibut in a beurre blanc. It also works well with soft, creamy cheeses like brie or triple-cream. Serve at 10–12°C (50–54°F) to showcase both aromatics and texture.
