Grapes are typically hand-picked at optimal ripeness to preserve both freshness and complexity, then gently pressed and fermented with indigenous yeasts. Élevage takes place in carefully selected barrels—often with a restrained proportion of new oak—to respect the character of the terroir, followed by extended aging on fine lees to build texture, depth and finesse before bottling.
