The blend typically centers on Garnacha and Cariñena, often complemented by small portions of other Mediterranean varieties, all harvested by hand due to the dramatic slopes. Careful selection in the vineyard and cellar ensures only the best fruit is used. Fermentation takes place in temperature-controlled tanks to preserve aromatic purity and fruit definition, followed by maturation in a mix of French oak barrels (often used rather than new) to add texture and complexity without overwhelming the wine’s intrinsic freshness and minerality.
