Tasting Notes
In the glass, the 2022 Rubicon shows a deep, saturated ruby to garnet hue with brilliant clarity, hinting at its concentration and youth. The nose is layered and expressive, offering ripe blackcurrant, blackberry, and plum alongside touches of violet, graphite, and warm baking spices. Subtle notes of cedar, tobacco leaf, cocoa, and crushed gravel underscore its Rutherford pedigree.

Production
Rubicon is produced exclusively from Inglenook’s historic estate vineyards in Rutherford, Napa Valley, an area celebrated for its well-drained alluvial soils, warm days, and cooling evening breezes from San Pablo Bay. This unique terroir delivers Cabernet Sauvignon and other Bordeaux varieties with both richness and structure, and the famed dusty, fine tannins unique to Rutherford. Grapes are typically harvested by hand in small lots at optimal ripeness, allowing for precise selection in the vineyard and on sorting tables. In the winery, fruit is gently destemmed and fermented in temperature-controlled vessels, often with a focus on preserving aromatics and achieving refined tannin extraction through careful pump-overs or punch-downs. Following fermentation, the wine is aged in high-quality French oak barrels (a portion new), where it undergoes malolactic fermentation and matures to gain texture, aromatic complexity, and seamless integration of oak before final blending and bottling at the estate.

The 2022 Inglenook Rubicon is a natural partner for richly flavored, refined dishes. Think dry-aged ribeye, grilled lamb chops with rosemary, beef tenderloin with red wine reduction, or braised short ribs over creamy polenta. It also pairs beautifully with roasted duck, herb-crusted pork, wild mushrooms, truffle dishes, and aged hard cheeses such as Comté, aged Gouda, or Parmigiano-Reggiano. Serve at 16–18°C (60–65°F) for optimal expression of aromatics and structure. Younger bottles will benefit from decanting for 60–90 minutes to soften the tannins and open up the bouquet, while mature bottles may need only a gentle splash decant to separate any sediment.
