Crafted exclusively from Pinot Noir and made in the traditional method, it offers the precision and finesse you’d expect from top sparkling regions, with a distinctly Mediterranean character. Brut Nature in style—meaning no dosage is added—this wine is all about purity, tension, and the honest expression of grape and place.
Tasting Notes
In the glass, this Tantum Ergo Rosé presents a pale onion-skin to light salmon hue, with a fine, persistent bead that forms a delicate crown of mousse. The nose is precise and lifted, revealing wild strawberries, crushed raspberries, and red currant, supported by notes of rose petals, fresh brioche, citrus zest, and a touch of chalky minerality.
On the palate, it is dry, taut, and finely textured, with the Brut Nature style lending real linearity and definition. Red berry fruit is framed by blood orange, pink grapefruit, and subtle savory tones, while the autolytic character adds hints of toasted brioche and almond cream without ever feeling heavy. The acidity is vibrant yet well-integrated, giving a long, saline, and mouthwatering finish. While it drinks beautifully now for its freshness and tension, it also has the structure and concentration to develop more complexity over the next 3–5 years, gaining additional brioche and nutty notes with time on cork.

The Tantum Ergo Pinot Noir Rosé Brut Nature is sourced from estate vineyards in Utiel-Requena, a high-altitude region inland from Valencia known for its continental-influenced Mediterranean climate: warm days, cool nights, and significant diurnal shifts that help preserve acidity and aromatic complexity. The Pinot Noir is typically harvested by hand at optimal ripeness to balance vibrant acidity with flavor depth, with meticulous selection both in the vineyard and at the sorting table. A gentle pressing of whole or lightly crushed clusters yields a delicate rosé must with minimal phenolic extraction, which then undergoes a cool primary fermentation in stainless steel to safeguard freshness and varietal character. The traditional method (méthode traditionnelle) second fermentation takes place in bottle, followed by an extended period of lees aging to build texture, complexity, and the fine, creamy mousse that defines the style. As a Brut Nature, no dosage is added at disgorgement, allowing the wine’s natural purity, minerality, and structure to stand front and center.

This is a versatile gastronomic sparkling rosé that shines at the table. It pairs beautifully with tuna tartare, salmon sashimi, shrimp carpaccio, oysters, and other delicate shellfish, as well as Iberian charcuterie, sushi, and lightly spiced Asian dishes. It also works well with soft cheeses, goat cheese salads, and refined vegetable dishes like beet carpaccio or roasted root vegetables. Serve well chilled at around 6–8 °C (43–46 °F) for maximum precision and freshness.
