The continental climate, with hot days, cool nights and long autumns, allows for slow, complete ripening of the thin-skinned Nebbiolo grapes. Harvest is carried out by hand, parcel by parcel, to ensure optimal selection and gentle handling of the fruit. In keeping with Borgogno’s deeply traditional approach, fermentation typically takes place in concrete, with extended maceration on the skins to extract color, tannin and aromatics in a measured, natural way. The wine is then aged for an extended period in large, neutral Slavonian oak casks (botte), which respect the purity of the grape and terroir rather than imprinting strong oak flavors, before further refinement in bottle prior to release.
