Sourced from select vineyards across Paso Robles, this Cabernet benefits from the region’s warm days, cool nights, and diverse soils that range from calcareous limestone to loamy, rocky hillsides—conditions that naturally concentrate flavor while preserving freshness. Grapes are harvested at optimal ripeness, often in the cool of the night or early morning to protect aromatic intensity and balance. In the cellar, the fruit is carefully sorted and destemmed, then fermented in temperature-controlled tanks to extract color, flavor, and fine-grained tannins without harshness. Aging in oak barrels—primarily French and possibly with a portion of American oak—adds layers of vanilla, toast, and spice, while maintaining the pure Paso Robles fruit at the core of the wine.
