In the glass, the 2022 Montée de Tonnerre shows a pale lemon color with green highlights, signaling both youth and freshness. Montée de Tonnerre lies on the right bank of the Serein River, directly adjacent to the Chablis Grands Crus, on steep, well-drained slopes rich in Kimmeridgian limestone and fossilized marine shells. This exceptional terroir is largely responsible for the wine’s intense minerality and finesse. At Domaine William Fèvre, the grapes are hand-harvested—a rarity in Chablis—to ensure optimal selection and gentle handling. After a careful pressing, fermentation takes place mainly in temperature-controlled stainless-steel tanks to preserve purity and freshness, with a portion aged in neutral French oak to add texture and subtle complexity without overt oak influence. The wine is then aged on fine lees, enhancing mouthfeel and aromatic detail while maintaining the hallmark tension and clarity of top-tier Chablis.

This Chablis Premier Cru excels alongside pristine seafood: oysters, scallops, turbot, sole, and sushi or sashimi all highlight its saline edge and crisp acidity.
