Tasting Notes
In the glass, the 2022 Chablis Premier Cru Beauroy is pale lemon with a silvery-green hue, hinting at its youth and freshness. The nose opens with bright citrus—lemon zest and lime leaf—wrapped around crisp green apple, pear skin and white peach. With a little air, more complexity emerges: white flowers, wet stone, oyster shell and a subtle touch of pastry or almond from its élevage. On the palate, this wine is sleek and focused yet not austere, showing a lovely interplay between ripe fruit and mineral structure. Flavors of lemon curd, crunchy apple, and stone fruit are layered over a core of chalky, saline minerality that is very typical of Chablis Premier Cru. The acidity is vibrant but well-integrated, giving the wine both tension and length, while a fine, almost creamy texture adds a touch of generosity without ever feeling heavy. The finish is long and mouthwatering, with lingering notes of citrus pith and sea breeze. Production
Beauroy is a Premier Cru hillside site on the left bank of the Serein River, with predominantly Kimmeridgian limestone and clay soils—rich in fossilized marine shells—that give Chablis its hallmark chalky, saline character. The southwest exposure allows the grapes to achieve good ripeness while preserving freshness, especially in a balanced vintage like 2022. At Domaine William Fèvre, vineyards are farmed with great respect for the environment, using sustainable and largely organic practices, with strict yield control and careful hand harvesting to ensure only perfectly healthy, ripe Chardonnay grapes are brought to the cellar. After gentle pressing, the must is fermented primarily in stainless steel to preserve purity and tension, with a portion aged in neutral French oak barrels to add subtle texture and complexity without overt oak flavor. The wine then rests on its fine lees, gaining additional depth, nuance and length before bottling.

Food & Serving
This Chablis Premier Cru Beauroy is a superb partner for classic seafood dishes: think freshly shucked oysters, scallops in a light beurre blanc, grilled prawns, or simply prepared white fish with lemon and herbs. It also shines alongside sushi and sashimi, steamed mussels, crab, and refined shellfish preparations, as well as goat cheese, mild cow’s milk cheeses, and delicate poultry dishes with cream or mushroom sauces. Serve well chilled, ideally around 10–12°C (50–54°F), to highlight its freshness and aromatics; as it warms slightly in the glass, more texture and complexity will emerge. Decanting is not essential, but pouring the wine into a larger-bowled white wine glass and giving it 10–15 minutes in the glass will help open up its aromatics, especially in the first few years after release.
