Tasting Notes
In the glass, the 2022 Les Preuses shows a luminous pale gold colour with green reflections, hinting at both youth and concentration. The nose is at once pure and complex: citrus oils, lemon zest and crushed oyster shell unfold into white flowers, green apple, and subtle notes of chalk, flint, and delicate spice from élevage.
On the palate, the wine is precise and tightly woven, with a striking mineral spine that supports layers of orchard fruit, Amalfi lemon, and a touch of ripe stone fruit. The texture is silky yet taut, with vibrant acidity and a salty, mouth-watering finish that lingers on chalk and citrus peel. While already seductive in its youth, this Grand Cru has the structure and balance to evolve beautifully for 10–15 years or more, gaining even greater complexity and depth with time in bottle.
Production
Les Preuses is one of Chablis’ most esteemed Grand Cru vineyards, situated on steep, well-exposed slopes with classic Kimmeridgian limestone and fossil-rich marl that impart the distinctive ‘iodine’ and chalky character to the wine. Domaine William Fèvre farms these old-vine parcels with meticulous attention to detail, favouring sustainable, low-intervention viticulture and careful, often manual harvesting to ensure pristine fruit. In the cellar, the must is gently pressed and fermented at controlled temperatures to preserve aromatic purity, with maturation in a judicious mix of stainless steel and a small proportion of older French oak to add texture and complexity without masking the terroir-driven minerality that defines Les Preuses.
Food & Serving
This Chablis Grand Cru is a superb partner for refined seafood dishes such as oysters, scallops, langoustines, turbot, or sole in beurre blanc, as well as lobster or crab with delicate citrus- or butter-based sauces. It also pairs beautifully with high-quality sushi and sashimi, caviar, and simply prepared poulet de Bresse or veal in cream sauces, as well as aged, firm cheeses like Comté. Serve at 10–12°C (50–54°F) to highlight its freshness and nuance. Young bottles will benefit from 30–60 minutes in a decanter to open up the nose and soften the structure, while mature examples can be enjoyed after a gentle pour directly from the bottle.
