The 2022 Domaine William Fèvre Chablis Grand Cru Bougros Côte Bouguerots is one of Chablis’ most coveted expressions of Chardonnay, drawn from a steep, sun-drenched slope at the very edge of the Grand Cru hillside. This cuvée is prized for its striking combination of power, precision, and mineral intensity, offering a deeply pure expression of Kimmeridgian limestone. As one of William Fèvre’s flagship Grand Crus—first crafted shortly after the estate’s founding in 1959—it has become a benchmark for modern Chablis of both stature and finesse.

Tasting Notes
In the glass, the 2022 Bougros Côte Bouguerots shows a pale, luminous straw color with green reflections, hinting at both youth and vibrancy. The nose is finely etched and layered: ripe citrus (lemon zest, yuzu), crunchy green apple, and white peach glide over more serious notes of crushed seashells, chalk dust, and a whisper of white flowers, with a touch of flinty smoke and subtle pastry from élevage. On the palate, this is a powerful yet laser-focused Grand Cru, with a firm spine of acidity driving through a concentrated core of fruit. Expect a mouth-coating texture balanced by a saline, almost oceanic minerality—lime, grapefruit pith, green pear, and stone fruit are wrapped in nuances of iodine, wet stone, and a touch of hazelnut and brioche as it opens. The finish is long, vertical, and mouthwatering, leaving a lingering impression of citrus oil and chalk. While already impressive in youth, the 2022 has excellent aging potential: 10–15 years (and longer in ideal cellaring conditions) will allow the wine’s structure, complexity, and tertiary notes to fully unfold.

Production
Côte Bouguerots is a particularly steep and low-yielding section of the Bougros Grand Cru, located on the western edge of the Chablis Grand Cru slope, with vines rooted deep in classic Kimmeridgian limestone rich in marine fossils. This exceptional terroir provides both excellent drainage and reflected light, helping the Chardonnay achieve ideal ripeness while preserving piercing freshness. Harvesting is carried out by hand, with a rigorous selection of bunches directly in the vineyard and again at the winery to ensure only perfectly healthy grapes are used. The fruit is gently pressed, then vinified with a focus on purity and tension: fermentation takes place partly in stainless steel to preserve bright fruit and minerality, and partly in older French oak barrels to add discreet texture and complexity. Aging continues on fine lees, with bâtonnage used judiciously, resulting in a wine that marries depth and richness with hallmark Chablis precision.

Food & Serving
This Grand Cru Chablis is a superb match for refined seafood and elegant, subtly rich dishes. Think oysters and shellfish platters, lobster with beurre blanc, pan-seared scallops, turbot or sole with a light cream or beurre blanc sauce, sushi and sashimi, or poultry with morel cream and delicate, buttery sauces. It also pairs beautifully with fine goat’s cheese or aged, nutty cow’s milk cheeses like Comté. Serve at 10–12°C (50–54°F) to showcase its aromatic detail and mineral finesse. Decanting for 30–45 minutes in its youth can help the wine relax and reveal more of its layered complexity; older bottles (8+ years) should be handled gently and may be better simply poured from bottle to glass without extended aeration.
