2022 Domaine les Verrieres Clos des Soutyères is a characterful Languedoc red that combines Mediterranean richness with real finesse. Crafted by Domaines Paul Mas under the guidance of Jean‑Claude Mas, it showcases how far this historic region has come in the world of premium wine. A Syrah‑led blend from rugged, limestone-rich vineyards, it offers ‘rural luxury’ in the glass — authentic, generous, and beautifully polished.
Tasting Notes
In the glass, Clos des Soutyères shows an intense, deep ruby-red colour with vibrant highlights that hint at its freshness and youth. The nose is complex and inviting, opening with wild herbs, garrigue, and notes of thyme and subtle lavender, layered over ripe dark berries and plums, with a gentle touch of sweet spice and refined oak.
On the palate, this is a generous, rounded, and well-balanced wine. Juicy flavours of ripe black fruit and red cherry are wrapped in savoury notes of herbs, pepper and a hint of Mediterranean scrub, supported by elegant, crisp tannins and well-judged oak. The texture is smooth yet structured, with enough freshness to keep the wine lively and food-friendly. Enjoyable now for its vibrant fruit and spice, it also has the concentration and structure to develop additional complexity over the next 5–7 years.
Production
The grapes for Clos des Soutyères come from 22 hectares of sustainably farmed vineyards between Montagnac and Saint-Pons-de-Mauchiens, near the Grés de Montpellier appellation. Here, small plots of vines are rooted in dry, stony soils of limestone, clay and chalk, surrounded by cypress, olive and fig trees and influenced by a climate of hot days, cool nights and strong Languedoc winds. The blend is 70% Syrah, 20% Grenache Noir and 10% Carignan, all hand-harvested and destemmed. Each variety is vinified separately, beginning with a short cold pre-fermentation maceration. Fermentation takes place at controlled temperatures (up to 28°C) with selected yeasts to preserve aromatics and fruit purity. The wine is then aged for 8 months in oak barrels, with one-third in one-year-old barrels and two-thirds in new oak, adding depth and polish without overwhelming the grape character.
Food & Serving
Clos des Soutyères is a natural partner for flavourful, hearty dishes: think grilled or barbecued ribeye, lamb chops, duck breast, osso buco, or rich stews and braises. It also works beautifully with aged hard cheeses and robust semi-hard styles. Serve at 16–18°C; a brief decant of 30–45 minutes helps the wine open up, softening the tannins and allowing the herbal and spice notes to fully unfold.
