Tasting Notes
In the glass, this Saint-Aubin shows a pale to medium lemon hue with a youthful, crystalline brightness that hints at its freshness and vigor. The nose is inviting and precise, opening with notes of lemon zest, white peach and crisp pear, layered with hints of acacia blossom, chalk, and a touch of hazelnut and fresh cream from well-judged oak. On the palate, the wine is sleek yet mouthfilling, combining lively citrus and stone-fruit flavors with a fine, saline backbone. Sourced from the limestone-rich slopes of Saint-Aubin, Les Pucelles benefits from classic Côte de Beaune terroir: thin, stony soils over fractured limestone with good drainage and a relatively cool exposition that preserves acidity. Grapes are typically harvested by hand to ensure optimal selection of bunches and to protect the fruit’s natural aromatics and freshness. In keeping with fine white Burgundy tradition, fermentation usually takes place in temperature-controlled conditions, often in French oak barrels, followed by élevage on the lees to build texture and complexity. The use of oak is generally restrained, allowing the tension, mineral character, and clarity of the Chardonnay to shine through rather than be dominated by wood.

This magnum of Saint-Aubin Les Pucelles is a versatile partner at the table, shining alongside refined dishes such as seared scallops, poached turbot, grilled sea bass, or butter-roasted chicken with herbs.
