The 2022 Domaine Lamy-Pillot Saint Aubin 1er Cru En Créot is a poised and generous white Burgundy from one of the most quietly exciting appellations in the Côte de Beaune. Sourced from a tiny Premier Cru parcel in Saint-Aubin, this Chardonnay combines ripeness and texture with the precision and minerality that Burgundy lovers seek. With production naturally limited by the small vineyard size and frequent weather challenges, this cuvée offers a rare glimpse into a fine Premier Cru at a still-accessible level compared with its famous Montrachet neighbors. Its unique selling point lies in its balance of richness and approachability: full, creamy and aromatic, yet framed by fresh acidity and a stony backbone. Les Créot’s south-facing exposure, chalky limestone soils and low yields give the wine both concentration and finesse, while 12–18 months of aging in French oak (25% new) add depth and complexity without overwhelming the fruit. Though the Lamy and Pillot families trace their roots in Chassagne-Montrachet back to the 16th century, this particular Chardonnay parcel was only planted in 2000, representing a modern expression of a centuries-old winemaking heritage.
Tasting Notes
In the glass, the 2022 Saint Aubin 1er Cru En Créot shows a bright, luminous straw-yellow color with hints of green at the rim, reflecting its youth and vibrancy. The nose opens with generous aromas of ripe stone fruits—think white peach and apricot—interwoven with notes of pear, citrus zest and white flowers. Subtle layers of toasted hazelnut, vanilla and a touch of brioche reveal the influence of carefully judged oak aging, underpinned by a chalky, mineral lift.
On the palate, the wine is broad, rich and mouth-filling, yet remains beautifully poised. A creamy texture carries flavors of ripe orchard fruits, lemon curd and acacia blossom, harmoniously integrated with delicate spice, a hint of toast and light notes of wood from its time in barrel. There is plenty of structure here, with a fine, linear acidity and a saline, limestone-driven finish that keeps the wine fresh and focused. While this Saint Aubin 1er Cru is very accessible and enjoyable in its youth, it has the backbone and concentration to age gracefully for 7–10 years from the vintage, developing more nutty, honeyed and tertiary nuances over time.
Production
Les Créot is a Premier Cru vineyard in the Saint-Aubin appellation, set on a south-facing slope that benefits from excellent sun exposure and cool Burgundian nights. The soils are loose, chalk-rich sands mixed with pebbles and fractured limestone, conditions that naturally limit vigor and yield, promoting concentration and a pronounced mineral character in the Chardonnay. Planted in 2000, the vines are now reaching an age that delivers both intensity and balance. As with all Domaine Lamy-Pillot wines, the grapes are harvested entirely by hand to ensure meticulous selection and gentle handling. In a region prone to spring frosts and hail, yields are often lower than the theoretical maximum of around 3,900 bottles from this 0.62-hectare parcel, further enhancing the wine’s depth. After fermentation, the wine is matured for 12–18 months in French oak barrels, around 25% of which are new, providing structure, texture and subtle complexity without dominating the purity of the fruit.

This Saint Aubin 1er Cru En Créot is a versatile partner for refined cuisine, particularly dishes that highlight texture and subtle richness. It pairs beautifully with butter-poached or grilled white fish, roast chicken with herbs, veal in a light cream sauce, and seared scallops or lobster. It also works wonderfully with poultry terrines, creamy risottos, mushroom dishes and fine soft cheeses such as Brie de Meaux, Chaource or a young Comté. For optimal enjoyment, serve at 10–12°C (50–54°F); slightly cooler if you prefer more tension, slightly warmer to accentuate the wine’s breadth and aromatics. A short decant of 20–30 minutes, or simply opening the bottle a bit before serving, will help the wine open up and show its full aromatic complexity.

Domaine Lamy-Pillot is a respected family estate rooted in the heart of the Côte de Beaune, with deep ties to Chassagne-Montrachet and its surrounding villages. The domaine was founded in 1973 when René Lamy and Thérèse Pillot—both from long-established winegrowing families—married and created their own estate in the hamlet of Morgeot on the outskirts of Chassagne-Montrachet. The Pillot lineage in the commune can be traced back to 1595, underscoring a continuity of viticultural know-how spanning generations. Today, the 20-hectare property is managed by their daughters Florence and Karine and their husbands, with Florence and her husband, Sébastien Caillat, overseeing vinification. Trained in Beaune, Strasbourg and Dijon and seasoned by numerous stages both in France and abroad, they have elevated the domaine’s profile, crafting precise, characterful wines from 27 appellations, primarily in Chassagne-Montrachet and Saint-Aubin.
