The 2022 Domaine Lamy-Pillot Chassagne-Montrachet Pot Bois is a refined white Burgundy that showcases the understated elegance of Chassagne in a particularly expressive vintage. Sourced from a single, well-exposed vineyard, it marries precision, minerality and discreet oak into a beautifully balanced Chardonnay. This cuvée draws on old family know-how and top-quality plant material to deliver a wine that is both approachable in youth and rewarding with a few years of cellaring.

Tasting Notes
In the glass, the 2022 Pot Bois is a bright, pale to medium lemon-gold, with a subtle sheen that hints at its time in oak. The nose opens delicately with notes of white blossom, acacia and hawthorn, followed by ripe yellow orchard fruits such as peach and mirabelle, supported by a fine thread of citrus. Gentle, well-judged oak adds nuances of vanilla, light toast and a touch of sweet spice, without ever dominating the fruit. On the palate, the wine is elegant and finely etched rather than opulent, with a core of yellow stone fruit, pear and a hint of citrus zest framed by a lively, refreshing acidity. The stony, limestone-driven minerality runs through the mid-palate, giving both tension and length. The oak is seamlessly integrated, contributing texture and a creamy nuance while preserving clarity and freshness. While already charming, this wine benefits from 2–3 years in bottle to reveal its first secondary notes—hazelnut, brioche and honeyed tones—and will drink beautifully for 8–10 years from the vintage in good storage conditions.

Production
The Chardonnay for Chassagne-Montrachet Pot Bois comes from a 1.7-hectare vineyard named Pot Bois, planted in stages (1970, 2001 and 2002) on well-drained, stony limestone soils with very little clay. The plot is oriented east and south-east, ensuring generous morning and early-day sun while retaining freshness—an ideal exposure for fine white Burgundy. The Chardonnay clone used here traces its origins to prestigious nearby sites, Caillerets and Grande Montagne, known for their finesse and mineral precision. Grapes are carefully harvested by hand at optimal ripeness, preserving aromatic purity and natural acidity. After gentle pressing and fermentation, the wine is aged 12 to 18 months in French oak barrels, with a maximum of about 25% new oak, to bring subtle structure and complexity without overshadowing the terroir expression.

Food & Serving
This Chassagne-Montrachet pairs beautifully with refined dishes that echo its finesse and minerality: seared scallops, grilled turbot or sole, poached lobster, or roasted chicken with morel or tarragon cream sauce. It also works very well with veal blanquette, richer seafood pastas and semi-mature cheeses such as Comté, Beaufort or aged goat’s cheese. Serve at 10–12°C (50–54°F) to highlight its aromatic detail and tension; avoid serving too cold, as this can mute the bouquet. Young bottles will benefit from a light aeration—either in a small carafe for 20–30 minutes or simply opened in advance—to allow the floral and vanilla notes to unfurl.

Producer
Domaine Lamy-Pillot is a family-run estate based in the hamlet of Morgeot on the outskirts of Chassagne-Montrachet, founded in 1973 by René Lamy and Thérèse Pillot—both from long-established Burgundian wine families. The Pillot line can trace its roots in Chassagne-Montrachet back to 1595, underscoring a deep, multi-generational connection to these vineyards. Today the domaine farms around 20 hectares spread over 27 appellations, primarily in Chassagne-Montrachet and Saint-Aubin, and is managed by their daughters Florence and Karine and their husbands. Florence, trained in Beaune, and her husband Sébastien Caillat, trained in Strasbourg and Dijon, took over cellar responsibilities in 1998 after gaining experience through numerous internships in France and abroad. Under their stewardship, Lamy-Pillot has become known for classically styled, terroir-focused Burgundies that deliver honest, precise expressions of some of the Côte de Beaune’s most respected climats.
