The 2022 Domaine Lamy-Pillot Chassagne-Montrachet 1er Cru Les Vergers is a refined, mineral-driven white Burgundy crafted from old-vine Chardonnay in one of the village’s most prized Premier Cru vineyards. Produced in very limited quantities (around 900 bottles in good years), it offers a beautifully composed expression of terroir where fruit, oak and minerality are held in perfect balance. With meticulous, family-led winemaking and a legacy rooted in Chassagne since the 16th century, this is a cuvée that will appeal to serious Burgundy lovers and collectors alike.

Tasting Notes
In the glass, the 2022 Les Vergers shows a luminous pale gold colour with green highlights, hinting at both youth and tension. The nose is precise and elegant, opening with notes of white flowers, citrus zest and green apple, followed by more complex layers of stone fruit, chalky minerality and a subtle touch of toast and hazelnut from its time in oak. On the palate, the wine is both juicy and tightly focused, with a fine, linear acidity that frames the generous Chardonnay fruit. Expect flavours of lemon curd, pear, crisp peach and a saline, stony core that clearly reflects its limestone plateau origins. The oak is discreet and supportive – never dominant – adding gentle creaminess and texture without masking the terroir’s mineral signature. The finish is long, precise and mouthwatering, suggesting excellent aging potential. While already harmonious and well-balanced in its youth, it will gain further complexity, depth and integration over the next 5–10 years in a good cellar.

Production
Les Vergers is a Premier Cru vineyard in Chassagne-Montrachet, here represented by a tiny 0.14-hectare parcel planted in 1972 on a limestone plateau with ideal natural drainage. The southeast exposure allows for optimal ripening while preserving freshness and aromatic finesse. Grapes are carefully harvested by hand to ensure rigorous selection in the vineyard. In the cellar, Florence Lamy and Sébastien Caillat follow a classic, terroir-focused Burgundian approach: gentle pressing, fermentation and then aging for around 16 months in French oak barrels, with a maximum of 25% new oak. Regular bâtonnage (lees stirring) is employed to add texture and complexity, while keeping the wood influence measured so that the purity of fruit and mineral profile remain at the forefront.

Food & Serving
This Chassagne-Montrachet 1er Cru Les Vergers is a superb partner to refined dishes such as butter-poached lobster, seared scallops, turbot or sole with beurre blanc, roasted chicken with morel or tarragon cream, and delicate veal or pork dishes in light sauces. It also pairs beautifully with aged Comté, Beaufort, or mild goat cheeses. Serve at 10–12°C (50–54°F) to highlight its precision and mineral drive. Young bottles will benefit from 30–45 minutes in a decanter or a large-bowled glass to allow the aromatics to fully open; older bottles (5+ years of age) should be handled more gently, with a brief, careful decant only if necessary.

Producer
Domaine Lamy-Pillot is a family estate firmly rooted in Chassagne-Montrachet, with the Pillot lineage in the village documented as far back as 1595. The modern domaine was founded in 1973 when René Lamy and Thérèse Pillot—both born into established wine families—married and began building their own property in the hamlet of Morgeot on the outskirts of Chassagne. Today, the estate farms around 20 hectares spread over 27 appellations, predominantly in Chassagne-Montrachet and Saint-Aubin. Now in the hands of daughters Florence and Karine and their husbands, with Florence and Sébastien Caillat overseeing vinification, Lamy-Pillot is known for its thoughtful, restrained use of oak and its commitment to expressing each terroir with clarity and finesse. Their Premier Crus, including Les Vergers, have earned a strong reputation among Burgundy enthusiasts for combining classical structure with accessible, juicy elegance.
