Domaine de Chevalier lies in the heart of Pessac-Léognan, in the Graves region of Bordeaux, where deep gravel soils intermixed with sand and clay sit atop well-drained subsoils—ideal conditions for Cabernet Sauvignon and Merlot. The terroir imparts the hallmark graphite, mineral and smoky nuances that distinguish Graves from other Bordeaux appellations. The vines are carefully tended, with a strong emphasis on sustainable, often organic-inspired viticulture and meticulous work in the vineyard, including green harvesting and strict selection at picking. Grapes are harvested by hand, parcel by parcel, at optimal ripeness and then sorted rigorously before vinification. Fermentation typically takes place in temperature‑controlled vats, followed by élevage in French oak barrels (a significant proportion new) for well over a year, allowing the wine to integrate its tannins and oak, and to develop its signature complexity and finesse.
