Tasting Notes
In the glass, the 2022 Les Griffons de Pichon Baron shows a deep, saturated ruby-purple color, hinting at its concentration and youth. The nose opens with intense aromas of cassis and ripe blackberries, layered with notes of graphite, cedar, violets and a touch of cigar box, all framed by well‑integrated, fine-grained oak.
On the palate, this is a structured yet polished Pauillac, with a core of dark fruit—blackcurrant, black cherry and plum—supported by fresh acidity and firmly sculpted tannins. Hints of dark chocolate, licorice and crushed stone add complexity on the long, persistent finish. Les Griffons de Pichon Baron comes from the estate’s gravelly, well-drained parcels in Pauillac, a classic Left Bank terroir where deep gravel over sand and clay naturally favors Cabernet Sauvignon and produces wines of remarkable structure and elegance. Grapes are harvested plot by plot at optimal ripeness, typically by hand, with careful sorting to ensure only pristine fruit is used. Vinification takes place in temperature-controlled vats, allowing for gentle extraction and precision during fermentation and maceration, followed by aging in French oak barrels (a portion new) to bring harmony, depth and fine tannic definition without overwhelming the purity of the fruit.

This 2022 Les Griffons de Pichon Baron is a natural partner for classic dishes such as roast lamb with rosemary, grilled ribeye, duck breast, or game birds, and it also shines alongside rich dishes like beef short ribs, mushroom ragout or aged hard cheeses. Serve at 16–18°C (60–64°F) to highlight its aromatics and structure. In its youth, decanting for 1–2 hours is recommended to soften the tannins and allow the wine’s layered bouquet to fully open.
