Tasting Notes
In the glass, the 2022 Château Pavie shows a deep, nearly opaque purple-black hue, hinting at its concentration and youth. The nose is layered and complex, with aromas of ripe black cherry, cassis, and blackberry compote intertwined with notes of violets, graphite, licorice, dark chocolate, and a touch of warm spice from high-quality French oak. Subtle hints of crushed rock and fresh herbs add lift and refinement. On the palate, this is full-bodied, dense, and richly textured, yet remarkably poised. The core is packed with dark fruit—black plum, blackcurrant, and blueberry—supported by firm, fine-grained tannins and a vibrant line of acidity that reflects Pavie’s limestone terroir. Production
Château Pavie’s vineyards occupy a privileged position on the southern slopes of Saint-Émilion, where steep, sun-drenched hillsides and a mix of limestone, clay-limestone, and sandy-clay soils create naturally low yields and intense fruit. The blend is typically dominated by Merlot, supported by Cabernet Franc and Cabernet Sauvignon, each parcel harvested by hand at optimal ripeness and sorted meticulously to ensure only the finest berries make it into the grand vin. Vinification is carried out parcel by parcel in temperature-controlled vats, with careful extraction to balance Pavie’s trademark power and structure with finesse. The wine is then aged in predominantly new French oak barrels, where it develops additional complexity, texture, and aromatic polish before bottling.

Food & Serving
This 2022 Château Pavie is a natural match for richly flavored dishes that can stand up to its depth and structure. Think dry-aged ribeye, roast lamb with herbs, beef Wellington, venison, or slow-braised short ribs; it also pairs beautifully with truffle-accented dishes, wild mushroom ragouts, and aged hard cheeses such as Comté or mature Gouda. Serve at 16–18°C (60–64°F) to showcase its aromatics and balance. In its youth, decanting for 2–3 hours is highly recommended to soften the tannins and allow the wine’s layered bouquet to fully emerge; older bottles will generally need a gentler, shorter decant mainly to remove sediment.
