Tasting Notes
In the glass, the 2022 Le Petit Mouton shows a deep, opaque ruby-purple hue, already hinting at its intensity and youth. The nose opens with a vivid bouquet of blackcurrant, ripe blackberry, and dark cherry, layered with graphite, cedar, cigar box, and hints of violet, mocha, and spice from its time in barrel.
On the palate, this is a structured yet seductive Pauillac, with a core of concentrated black fruit framed by firm, fine‑grained tannins and a fresh, balancing acidity. Flavors of cassis, black plum, and blackberry are underpinned by notes of cocoa, licorice, pencil shavings, and a subtle toastiness. The finish is long, polished, and slightly savory, suggesting excellent potential in bottle. Production
Le Petit Mouton comes from the gravelly, well‑drained soils of Pauillac on the Left Bank of Bordeaux, where deep layers of gravel over limestone and clay provide ideal conditions for Cabernet Sauvignon to ripen slowly and fully. The 2022 blend is typically dominated by Cabernet Sauvignon, complemented by Merlot and smaller proportions of Cabernet Franc and/or Petit Verdot, depending on the final assemblage of the vintage. The grapes are hand‑harvested in small parcels to ensure optimal ripeness and careful berry selection, then fermented in temperature‑controlled vats to preserve aromatic purity and extract fine tannins. After fermentation, the wine is aged in French oak barriques—often with a significant proportion of new oak, though less than the Grand Vin—to build complexity, texture, and aromatic finesse before bottling at the château.

This Pauillac pairs beautifully with classic, richly flavored dishes such as roast lamb with herbs, grilled rib‑eye steak, beef Wellington, braised short ribs, or duck with a red‑wine reduction. It also works well with game birds, truffle‑infused dishes, and aged hard cheeses like Comté or mature cheddar.
