Grapes are typically harvested parcel by parcel at optimal maturity, often by hand, allowing for meticulous selection of bunches. In the cellar, Lascombes uses a combination of temperature-controlled fermentation and careful extraction to capture both fruit purity and structure, followed by élevage in French oak barrels (a notable portion of which is new) to add polish, complexity, and aging capacity without overwhelming the natural character of the wine.
