Harvesting is typically done by hand, allowing the team to pick at optimal ripeness and to sort bunches carefully in the vineyard and at the cellar. After a gentle pressing, the must is fermented at controlled temperatures, often in a combination of stainless steel and French oak barrels, to preserve aromatic purity while adding texture and subtle complexity. Partial aging on fine lees with regular bâttonage (lees stirring) brings extra creaminess and roundness to the palate without sacrificing the wine’s precision and mineral edge.
