The vineyards lie on the famous “croupes de graves” (gravelly rises) close to some of Pauillac’s most illustrious neighbors, benefiting from excellent exposure and natural drainage, as well as the tempering influence of the nearby Gironde estuary. Harvesting is typically carried out parcel by parcel at optimal ripeness, with careful selection of the healthiest, most perfectly ripened grapes. In the cellar, traditional Bordeaux vinification is combined with modern precision: temperature-controlled fermentation in vats, followed by aging in French oak barrels (a significant proportion new) to refine the tannins, enhance structure, and frame the pure, dark fruit without overwhelming it.

This Pauillac is a natural partner for richly flavored, protein-driven dishes. Classic pairings include roast lamb with herbs, dry-aged ribeye or entrecôte, beef Wellington, venison, and other game, as well as slow-braised dishes like beef cheeks or short ribs. It also works beautifully with hard, aged cheeses such as Comté, aged Gouda, or mature Cheddar. Serve at 16–18°C (60–64°F) to best express its aromatics and structure. For current or near-term drinking, decanting for 1.5–2 hours is recommended to open up the nose and soften the tannins; with bottle age, a gentle 30–60 minute decant will help the wine show at its best.
