Y d'Yquem is the rare dry white wine from the legendary Château d’Yquem estate in Sauternes, offering a completely different expression of this iconic terroir. Uniquely, Y is made from impeccably ripe Sauvignon Blanc and Sémillon grapes selected *before* botrytis (noble rot) develops—quite the opposite of Yquem’s famous sweet wine. Tasting Notes

Production
Y d’Yquem is sourced entirely from the illustrious Château d’Yquem vineyard in Sauternes, a patchwork of gravel, clay and limestone soils resting on a superb, elevated plateau. This exceptional terroir benefits from a unique microclimate influenced by the Garonne and Ciron rivers, allowing slow, even ripening and superb expression of Sauvignon Blanc and Sémillon. For Y, the team makes a meticulous pre-selection, harvesting by hand in small passes to pick only perfectly ripe, healthy bunches *before* botrytis appears, effectively lightening the crop for the sweet wine while reserving the purest fruit for this dry cuvée. Vinification takes place in a dedicated fermentation cellar: the must ferments and ages on its lees (“sur lie”) in oak barrels, around one-third of which are new, adding subtle spice and structure without overwhelming the fruit. The wine typically matures for about 10 months in barrel, with regular lees stirring as needed, before blending and bottling, resulting in a wine of remarkable intensity, texture and finesse.
Food & Serving
The 2022 Y d’Yquem is an exceptionally versatile gastronomic white, ideal for refined cuisine. It pairs beautifully with delicate seafood—think turbot, sole, scallops, langoustines or lobster, whether simply grilled, poached in butter or served with a light cream or citrus beurre blanc. It also shines alongside fine poultry dishes such as roast chicken with morels, Bresse chicken in a cream sauce, or guinea fowl, as well as veal, light pork preparations, and luxurious vegetable dishes featuring mushrooms, asparagus or truffle. Mature hard cheeses (Comté, aged Gouda) and creamy cow’s milk cheeses are also superb partners. Serve well-chilled but not icy, ideally around 10–12°C (50–54°F), to allow the aromatic complexity to unfurl. Young bottles can benefit from 30–60 minutes in a decanter to open up, especially if served in serious white wine stems; older vintages should be handled more gently and may only need a brief, careful aeration.
