Tasting Notes
In the glass, this Santenay Blanc shows a pale straw to light gold hue with a youthful brightness and green reflections that hint at its lively acidity. The nose opens with citrus notes—lemon zest, lime blossom, and grapefruit—layered with crisp green apple, white flowers, and subtle stone-fruit tones. With a bit of air, more complex aromas emerge: wet stones, fresh almond, and a delicate touch of white peach and hazelnut.
On the palate, the wine is precise and pure, with a focused, mineral backbone typical of good white Burgundy. Expect flavors of lemon curd, crunchy pear, and orchard fruits supported by a fine, saline tension and well-judged oak, if used, that shows as gentle toast or a hint of vanilla rather than overt richness. Production
Les Terrasses de la Crée comes from terraced parcels in Santenay, in the southern Côte de Beaune, where Chardonnay thrives on limestone and marl soils that naturally limit yields and emphasize tension and minerality. The slopes offer good drainage and excellent sun exposure, producing grapes with both ripeness and vibrant acidity. Harvesting is typically done by hand to ensure careful selection of bunches at optimal maturity. In the cellar, the grapes are gently pressed before undergoing a temperature-controlled fermentation, most often in a combination of stainless steel and French oak barrels to marry freshness with subtle complexity. Aging on fine lees for several months helps build texture and mouthfeel without sacrificing the wine’s clarity and precision.
Food & Serving
This Santenay Blanc pairs beautifully with classic dishes such as grilled or poached white fish, shellfish (especially scallops, prawns, and crab), roast chicken with herbs, and creamy poultry or veal dishes. It also works well with soft cheeses like Brie, Camembert, and mild goat’s cheese, as well as vegetable-based plates featuring asparagus, fennel, or mushrooms. Serve at around 10–12°C (50–54°F) to highlight its freshness and aromatics; avoid serving too cold, which can mute the nose. Decanting is not essential for this youthful white Burgundy, but pouring it into a carafe 15–20 minutes before serving can help open up its more subtle floral and mineral nuances.
