Tasting Notes

Château Changyu Moser XV is located in Ningxia, in the foothills of the Helan Mountains, one of China’s most promising wine regions. The vineyards sit at altitude in a semi-arid continental climate, with abundant sunshine, cool nights and gravelly, well-drained soils that favour slow, even ripening of Cabernet Sauvignon. Grapes are typically harvested by hand to ensure careful selection of bunches, preserving freshness and purity of fruit. In the winery, fermentation takes place in temperature-controlled tanks to extract colour and aroma without overly aggressive tannins. The wine is then matured in a combination of stainless steel and oak (often a mix of new and used barrels), allowing the vibrant fruit character to shine while gaining subtle structure and spice from wood.
