Tasting Notes
In the glass, the 2022 Canon-La Gaffelière shows a deep, saturated ruby-purple hue, hinting at its concentration and youthful intensity. The nose opens with layers of ripe blackberries, black cherries, and cassis, followed by notes of violet, graphite, and warm spices, with touches of cocoa, cedar, and a faint herbal freshness that keeps everything lifted.
On the palate, this is a full-bodied yet finely sculpted Saint-Émilion: ripe dark fruits are framed by polished tannins and a vibrant line of acidity. Expect flavours of black plum, mulberry, and blackcurrant wrapped in notes of mocha, tobacco leaf, and sweet baking spices from the French oak. Production
Château Canon-La Gaffelière lies at the foot of the Saint-Émilion limestone plateau, on a patchwork of clay-limestone and sandy, warm, well-draining soils—ideal for Merlot and particularly for Cabernet Franc, a signature of the estate. The vineyards are farmed with great care, using sustainable, organic-inspired practices, and the grapes are harvested by hand in small parcels at optimal ripeness. Rigorous sorting in both vineyard and cellar ensures only pristine fruit is used. Vinification typically takes place in temperature-controlled vats, with gentle extraction to preserve finesse and aromatic purity, followed by aging in French oak barrels (a significant portion new) for around 15–18 months. This combination of exceptional terroir, meticulous selection, and precise cellar work yields a wine that is both generous and refined.

The 2022 Château Canon-La Gaffelière is a natural partner for classic dishes such as roast lamb with herbs, dry-aged ribeye steak, duck breast, or veal with morel mushrooms. It also pairs beautifully with earthy plates like mushroom ragù, truffle pasta, lentil dishes, or aged hard cheeses such as Comté and mature Gouda. For optimal enjoyment, serve at 16–18°C (60–64°F). In its youth, decant for 1–2 hours to allow the wine to open and soften; as it matures, a shorter decant of around 30 minutes is usually sufficient to release its more subtle aromas.
