The fruit is typically harvested at optimal ripeness to emphasize lush texture and generous flavor. In the cellar, the different red varieties are fermented separately in temperature-controlled tanks to preserve aromatics and fruit purity, then blended to achieve balance and complexity. A period of oak aging (often in a mix of American and/or French oak) adds structure and layers of vanilla, spice, and toast to the wine’s ripe fruit character.
