Tasting Notes
In the glass, the 2022 Shaya Habis shows a bright straw-yellow color with subtle golden highlights, hinting at its concentration and barrel aging. The nose is layered and complex: ripe stone fruits like peach and apricot mingle with citrus zest, fennel, wild herbs, and a distinct mineral streak, all wrapped in delicate notes of vanilla, toast, and baking spice from time in oak.
On the palate, this is a full-bodied, textural Rueda with real presence. Ripe orchard fruits, juicy pear, lemon curd, and hints of tropical fruit are balanced by vibrant acidity and a finely etched saline minerality. The oak is well-integrated, adding creaminess and spice without overpowering the fruit. The finish is long, elegant, and slightly savory, suggesting excellent aging potential. While already expressive now, the wine should continue to evolve beautifully over the next 5–7 years, gaining further complexity and nuance.
Production
Bodegas Shaya sources the grapes for Habis from some of the oldest Verdejo vineyards in Rueda, many planted in poor, sandy, and gravelly soils that naturally limit yields and concentrate flavor. These bush vines, often decades old, are typically dry-farmed, relying on the region’s continental climate with hot days and cool nights to achieve both ripeness and freshness. Harvest is carried out by hand to ensure only perfectly healthy, ripe bunches are selected. In the cellar, the must is often fermented and aged in French oak barrels, with a portion possibly resting on fine lees to build volume, texture, and complexity. This careful approach highlights the inherent character of old-vine Verdejo while adding a refined, Burgundian-like structure.

The 2022 Shaya Habis is a versatile food wine that shines with richly flavored dishes. It pairs beautifully with baked or grilled white fish, roasted chicken, herb-crusted pork, creamy seafood pastas, and dishes featuring saffron, garlic, and Mediterranean herbs.
