Tasting Notes
In the glass, the 2022 CARO shows a deep, vibrant ruby color with violet reflections that speak to its youthful energy. The nose is expressive and layered, offering ripe blackberries, cassis, and plum alongside notes of violets, dried herbs, cedar, and a touch of baking spice from careful oak aging. On the palate, it is full-bodied yet finely sculpted, combining Malbec’s juicy dark fruit with Cabernet’s linear backbone. Bodegas CARO sources its fruit from select high-altitude vineyards in Mendoza, primarily in the famed Luján de Cuyo and Uco Valley subregions. Here, intense sunlight, cool Andean nights, and poor, well-drained alluvial soils combine to produce grapes of great concentration and natural freshness. Grapes are typically harvested by hand to ensure careful selection in the vineyard. In the cellar, Malbec and Cabernet Sauvignon are vinified with a focus on gentle extraction to preserve aromatic purity and fine tannins, using temperature-controlled fermentation in stainless steel or concrete. The wine is then matured in French oak barrels—drawing on the Rothschild family’s deep expertise with barrique aging—to integrate structure, spice, and texture without overwhelming the fruit character.

The 2022 CARO is a natural partner for richly flavored dishes, especially grilled and roasted meats. Think Argentine asado, ribeye steak, lamb chops with rosemary, short ribs, or game birds; it also pairs beautifully with aged hard cheeses, mushroom dishes, and hearty pasta or risotto with truffle or wild mushrooms.
