Bodegas Alto Moncayo sources fruit from old, dry‑farmed Garnacha bush vines planted on rocky, poor soils at altitude in Campo de Borja, where the combination of intense sunshine, cool nights, and the region’s famous Cierzo wind produces low yields and exceptional concentration. Harvest is typically done by hand, allowing for careful bunch selection in the vineyard and at the winery. The grapes are fully destemmed and fermented in temperature‑controlled stainless‑steel tanks to preserve purity of fruit, followed by extended maceration to extract color, flavor, and structure. The wine is then aged in oak barrels (largely French, often with a proportion of new oak) to add complexity, polish the tannins, and support the wine’s generous, modern style without overshadowing the character of Garnacha and its terroir.
