The 2022 Bibi Graetz Colore is the flagship red wine from one of Tuscany’s most visionary winemakers, crafted almost entirely from venerable old vines rooted in high-altitude sites. As a single-vineyard-driven blend dominated by Sangiovese, it marries power, elegance and haunting complexity in a way that few modern Tuscan reds can match. Produced only from the very best barrels of the estate, Colore has become a modern icon that showcases just how profound Sangiovese can be in the right hands and the right terroir.

Tasting Notes
In the glass, 2022 Colore shows a deep, luminous ruby core with garnet highlights, reflecting both concentration and finesse. The nose is beautifully layered and expressive, with perfumed notes of violets and dried rose petals mingling with ripe blackberry, black cherry and wild forest berries. Subtle hints of blood orange zest, sweet tobacco, cedar, and a touch of graphite and spice add further detail and complexity. On the palate, the wine is intense yet ultra-refined, with Sangiovese’s hallmark linear structure wrapped in silky, polished tannins. Flavors of dark cherry, blackberry and plum are interwoven with savory notes of dried herbs, tea leaf, leather and a delicate earthy-mineral edge derived from the high-altitude vineyards. The texture is both ample and precise, with vibrant acidity providing lift and length and a very long, graceful finish. Still youthful and tightly coiled, this 2022 Colore has significant aging potential; while it can be exploratory-tasted with careful aeration, it will truly begin to show its depth and harmony from around 2025–2026 and continue to evolve beautifully for 15–20 years or more under proper cellaring.

Production
Colore is sourced primarily from ancient Sangiovese vines—many between 80 and 135 years old—planted at altitude in the historic Lamole area of Tuscany, complemented by small proportions of Canaiolo and Colorino. These high-elevation, poor, stony soils and cooler temperatures give naturally low yields, thick-skinned berries and intense aromatic concentration. The 2022 blend consists of 96% Sangiovese, 3% Canaiolo and 1% Colorino, with fruit hand-harvested from four prized sites: Lamole, Vincigliata, Olmo and Siena. Each vineyard was picked up to eight times to ensure only perfectly ripe bunches, followed by a second rigorous sorting at the winery before destemming. The berries are gently crushed and fermented by native yeasts in open-top barriques, with 6–8 manual punch-downs per day and no temperature control, allowing a natural, slow fermentation of about two weeks plus an additional week of skin maceration. After pressing, the wine is transferred to new barriques, where it undergoes malolactic fermentation and then ages for a total of three years before release. Only the very best parcels and barrels are selected to become Colore, ensuring both rarity and exceptional quality.

Food & Serving
This is a gastronomic wine that shines alongside refined, flavorful dishes. Think classic Tuscan fare such as bistecca alla fiorentina, slow-braised beef or lamb, wild boar ragù, or rich pasta with porcini mushrooms and truffle. It also pairs beautifully with aged hard cheeses like Parmigiano Reggiano or Pecorino Toscano and roasted game birds. Serve at 16–18°C (around 60–64°F) to highlight its aromatic complexity and structure. For drinking in its youth, decant for 2–3 hours to allow the wine to fully open; as it ages and integrates in bottle, a shorter decant of 60–90 minutes will usually be sufficient to reveal its full spectrum of aromas and flavors.
