Bottled only in magnum and produced in tiny quantities, the 2021 Álvaro Palacios L’Ermita is one of Priorat’s most coveted and collectible reds. With just 2,800 bottles made and a rare combination of power, freshness and low alcohol (13.9%, the lowest ever for this cuvée), this is a wine for the serious enthusiast and long‑term cellar. A blend dominated by old‑vine Garnacha with a substantial share of Cariñena from vertiginous slate terraces, L’Ermita has become the modern icon of Priorat and a benchmark for Mediterranean fine wine.

Tasting Notes
In the glass, the 2021 L’Ermita is deep ruby with a vivid, almost crystalline brightness that hints at its energy and precision. The nose is finely etched and aromatic rather than heavy: expect layers of red and black berries, wild herbs, crushed rock and a developing citrus lift of grapefruit zest and orange peel that will become more pronounced with age. Subtle floral tones and a gentle spice from élevage complete a wonderfully nuanced bouquet. On the palate, the wine is powerful yet remarkably poised, with the low pH and high natural acidity giving a spine of tension that carries through from attack to finish. Dense, ripe fruit sits on a framework of abundant, ultra‑fine tannins, delivering both volume and definition without any excess weight. There is impressive symmetry and balance: great concentration, but also remarkable finesse, purity and elegance. The 2021’s structure and freshness, combined with its 6.18 g/L acidity, promise very long aging potential; this magnum format will evolve slowly and gracefully over decades, gaining complexity, tertiary notes and a more pronounced citrus, mineral and truffle character.

Production
L’Ermita comes from a steep, northeast‑facing amphitheatre of old vines rooted in Priorat’s classic llicorella soils—thin, poor, laminated red slate flecked with quartz that reflects light and stores heat. This harsh terroir, together with dramatic diurnal temperature swings and the challenges of the 2021 season—from heavy winter snows (Filomena) to periods of drought—naturally restricts yields and concentrates flavor. The vines, predominantly Garnacha with a significant proportion of Cariñena, are meticulously hand‑tended and harvested by hand on precipitous slopes where mechanization is impossible. In the cellar, Álvaro Palacios vinifies parcel by parcel with great care: gentle extraction to protect finesse, fermentation tailored to preserve the wine’s aromatic precision and natural freshness, followed by élevage in carefully selected French oak, allowing the vineyard character and the vintage to take center stage rather than the wood.

Food & Serving
This is a gastronomic wine best matched with refined, flavorful dishes: think roasted or braised lamb, suckling pig, pigeon, venison or other game, as well as richly sauced dishes featuring wild mushrooms, truffles or Mediterranean herbs. It also pairs beautifully with slow‑cooked beef, deeply flavored vegetarian dishes based on roasted root vegetables and lentils, or aged hard cheeses. Serve at 16–18°C (60–64°F) in large Burgundy or generous Bordeaux stems to allow the aromatics to unfurl. Given its youth and concentration, decanting for 2–3 hours is highly recommended, and for those opening it in its first decade, a longer decant can help reveal its full spectrum of fruit, floral and mineral nuances.

Álvaro Palacios is widely regarded as one of Spain’s most influential and visionary winemakers. Born into the Palacios Remondo family estate in Rioja, he studied oenology in Bordeaux and honed his craft at the legendary Château Pétrus in Pomerol before turning his attention to the then‑forgotten hills of Priorat in the late 1980s. Drawn by the region’s ancient viticultural heritage—monks had cultivated vines here since the 12th century—and its dramatic llicorella slopes, he was among the pioneering group, alongside figures like René Barbier, who believed in Priorat’s extraordinary potential. In 1989 he acquired Finca Dofí, followed soon after by the now‑mythic L’Ermita vineyard, a steep, northeast‑facing site that has become the flagship and symbol of Priorat’s renaissance. Today, Álvaro Palacios’ wines are among Spain’s most sought‑after, frequently earning top scores and cementing his status as a defining figure in the region’s modern history.
