Tasting Notes
In the glass, it is typically deep ruby to purple in tone, with impressive concentration. The nose opens with ripe blackberries, black cherries, and dark plums, layered with violets, spice, cocoa, and subtle toasted oak notes. On the palate, expect a full-bodied wine with ripe tannins, fresh acidity, and a balanced core of dark fruit, mineral tension, and savory oak spice. The magnum format supports slower development, making it especially attractive for cellaring; while already expressive, it should reward patience over the next decade and beyond.

Production
Alión comes from selected vineyards across Castilla y León, where the continental climate, warm days, cool nights, and varied soils help preserve freshness while building concentration. Grapes are harvested by hand, with careful parcel selection to ensure only the best fruit is used. Vinification focuses on precision and elegance, with fermentation and aging in French oak to shape the wine’s structure without overpowering its fruit.

Food & Serving
This is an excellent match for grilled ribeye, roast lamb, Iberian pork, or rich dishes such as beef stew and mature hard cheeses. Serve at 16–18°C, and consider decanting for 1–2 hours if opening young, especially to allow the wine’s aromatic complexity and texture to fully unfold.
