The wine is based primarily on Prugnolo Gentile, the local Sangiovese clone, often complemented by small amounts of traditional Tuscan varieties. Grapes are typically hand-harvested at optimal ripeness to allow strict selection of only the healthiest bunches. Fermentation takes place in temperature-controlled tanks to preserve aromatic purity, followed by extended maceration to extract color, flavor and fine tannins. The Riserva designation reflects a longer maturation period, traditionally in large Slavonian oak casks or a combination of large casks and smaller barrels, allowing the wine to harmonize, soften and develop its complex bouquet before bottling and further aging in the cellar.
