In the glass, the 2021 Venus de Cartoixà shows a pale straw to light golden hue, with a slight viscosity that hints at concentration and structure. Venus de Cartoixà is sourced from organically farmed vineyards in Montsant, where poor, stony soils and a Mediterranean climate with notable diurnal swings help the Cartoixà grape retain freshness while achieving full phenolic ripeness. The vines are typically worked by hand, with careful selection of bunches at harvest to ensure only healthy, balanced fruit is used. In the cellar, Venus la Universal follows a low‑intervention philosophy: gentle pressing, native yeast fermentation and a restrained use of oak or neutral vessels (such as old barrels or concrete) to preserve the grape’s saline, herbal character and to build subtle texture rather than overt wood influence. Extended lees contact often contributes to the wine’s creamy mid‑palate and complexity.

This 2021 Venus de Cartoixà is a natural partner for Mediterranean cuisine and dishes that echo its herbal and saline edge.
