The vines are typically worked by hand, with careful selection of bunches at harvest to ensure only healthy, balanced fruit is used. In the cellar, Venus la Universal follows a low‑intervention philosophy: gentle pressing, native yeast fermentation and a restrained use of oak or neutral vessels (such as old barrels or concrete) to preserve the grape’s saline, herbal character and to build subtle texture rather than overt wood influence. Extended lees contact often contributes to the wine’s creamy mid‑palate and complexity.
