On the palate, the wine is full-bodied yet remarkably poised, with a precise, linear core that reflects the cooler 2021 growing season. Sourced from the fabled Bâtard-Montrachet Grand Cru, straddling the boundary between Puligny-Montrachet and Chassagne-Montrachet, this wine is rooted in deep, marl and limestone-rich soils that give both power and minerality. The terroir here combines excellent drainage with optimal exposure, allowing Chardonnay to achieve great ripeness while retaining tension and freshness, particularly important in a cooler vintage like 2021. Thomas Morey works with meticulous vineyard management, including careful canopy control and strict yield limitation, often with hand-worked parcels and green harvesting when necessary to ensure concentration. Harvest is conducted entirely by hand at optimal ripeness, with rigorous sorting in the vineyard and again at the winery. Fermentation takes place in oak barrels, typically with a significant but balanced proportion of new French oak, using indigenous yeasts to enhance complexity and terroir expression. The wine then ages on fine lees, with gentle bâtonnage as appropriate, to build texture and depth while preserving clarity and finesse, before careful blending and bottling with minimal intervention.
Food & Serving
This grand cru white Burgundy calls for refined, indulgent cuisine. Classic pairings include butter-poached lobster, scallops in a light cream or beurre blanc sauce, turbot or sole with beurre noisette, and roasted chicken with morel mushrooms or truffled jus. Rich poultry terrines, veal in a delicate cream sauce, or aged Comté and Beaufort also complement its depth and structure beautifully. Serve at 11–13°C (52–55°F) to allow the aromatic complexity and texture to fully express themselves—too cold and the wine will seem muted. For current drinking, decanting 30–45 minutes before serving can help the wine open up; for older bottles, a gentle splash-decant is sufficient, primarily to separate from any sediment.

Thomas Morey comes from one of the most established wine families in Chassagne-Montrachet, with roots in the village that stretch back to the 17th century. Having honed his craft alongside his father at Domaine Bernard Morey, Thomas established his own domaine in 2007 and quickly earned a reputation as one of the leading voices of a new-generation Burgundian vigneron: precise, restrained, and terroir-focused. Based in Chassagne-Montrachet, he farms and vinifies some of the Côte de Beaune’s most prestigious parcels, including top premier crus and grands crus like Bâtard-Montrachet. His wines are highly regarded by critics and collectors for their purity, balance, and ability to age, cementing his status as a benchmark producer in the southern Côte d’Or.
