Tasting Notes
In the glass, the 2021 Biserno presents a deep, concentrated ruby core with violet highlights, speaking to its youth and density. The nose is complex and layered, opening with blackcurrant, ripe black cherry and plum, followed by notes of graphite, cedar, pencil shavings and tobacco leaf. With air, more nuances emerge: wild herbs, cocoa, licorice, subtle spice and a touch of Mediterranean scrub.
On the palate, the wine is full-bodied yet finely proportioned, with a firm backbone of ripe, polished tannins and a vibrant line of acidity that keeps the richness perfectly in check. Dark berry fruit—cassis, blackberry and black cherry—takes center stage, supported by notes of mocha, sweet spice, graphite and a saline-mineral edge from the coastal influence. The finish is long, persistent and savory, hinting at dried herbs and fine oak integration. In magnum, this 2021 has excellent aging potential: it can be enjoyed now after proper aeration but will reward cellaring for 10–20 years, developing greater complexity, tertiary nuances and even silkier texture over time.
Production
Tenuta di Biserno lies in the coastal area of Bibbona in Tuscany, just north of Bolgheri, where clay-limestone soils, gravel and alluvial deposits provide an ideal setting for Bordeaux varieties. The proximity to the Tyrrhenian Sea moderates temperatures and ensures excellent diurnal shifts, helping the grapes retain aromatic lift and freshness. Grapes—primarily Cabernet Franc, with Cabernet Sauvignon, Merlot and Petit Verdot—are carefully hand-harvested in small crates, parcel by parcel, at optimal ripeness to preserve both fruit purity and structure. In the cellar, each variety and plot is vinified separately, typically in temperature-controlled stainless steel or concrete, with gentle extraction to capture color and fine tannins without harshness. The wine then matures in French oak barriques (a proportion new), where it undergoes malolactic fermentation and élevage, allowing the components to harmonize and gain depth before final blending and bottling. The magnum format further enhances the wine’s aging trajectory by slowing development and preserving aromatic detail.
Food & Serving
This is a serious Tuscan red built for the table, pairing beautifully with richly flavored dishes such as bistecca alla fiorentina, grilled or roasted lamb, braised short ribs, game birds, or slow-cooked ragù over pappardelle. It also complements aged cheeses like Parmigiano Reggiano, pecorino, or well-matured hard cow’s milk cheeses. Serve at 16–18°C (60–64°F) to highlight its aromatic complexity and fine tannins. Given the youth and structure of the 2021 vintage, decanting is recommended: allow at least 1–2 hours in a decanter for immediate drinking, and even longer if enjoyed within its first 5–7 years to fully open the bouquet and soften the palate.
