Sourced from the cool Alpine slopes of Alto Adige, Appius benefits from high-altitude vineyards, significant day-to-night temperature shifts, and mineral-rich soils that help preserve freshness and aromatic intensity. The grapes are carefully selected and harvested to ensure optimal ripeness, with vinification focused on preserving purity, structure, and complexity through attentive cellar work and maturation on the lees.

Food & Serving
This is an excellent match for refined dishes such as grilled white fish, shellfish, risotto with herbs, poultry in creamy sauces, or vegetable-based dishes with earthy depth. Serve chilled at around 10–12°C, and consider brief decanting if the wine is still very youthful to allow its aromatics to open fully.
