Grapes are picked by hand at optimal ripeness in the cool of the early morning to preserve freshness and delicate aromatics. The must is gently pressed, and fermentation typically occurs in a mix of stainless steel tanks, French oak barrels (often including a small proportion of new oak), and sometimes concrete or small casks to build texture and complexity. Lees aging with occasional stirring adds depth and a subtle creaminess, while the absence of heavy oak influence allows the varietal purity and terroir expression to shine.
