The 2021 San Marzano “F” Negroamaro Salento is a rich, modern expression of one of Puglia’s most characterful grapes. Crafted from carefully selected old vines in the sun-drenched Salento peninsula, it offers impressive concentration and silky depth at a still-approachable price point. This cuvée has become a reference for premium Negroamaro, helping to showcase just how complex and ageworthy wines from Southern Italy can be.

Tasting Notes
In the glass, the 2021 “F” Negroamaro shows an intense, deep ruby color with garnet reflections hinting at its richness and structure. The nose is generous and layered, with ripe black cherry, plum and blackberry compote, wrapped in notes of sweet spices, vanilla, cocoa, tobacco leaf and a touch of Mediterranean herbs. On the palate, it is full-bodied, velvety and enveloping, with dense dark fruit, black cherry liqueur, dried fig and a subtle balsamic edge. Fine-grained tannins provide structure without harshness, while well-integrated oak adds chocolate, coffee and sweet spice nuances. The finish is long and warming, with lingering notes of black fruit and spice. Enjoyable now for its opulent, plush character, it has the concentration and balance to evolve gracefully for another 5–8 years under good cellaring conditions.

Production
The grapes for San Marzano “F” Negroamaro come from old, low-yielding bush vines rooted in the limestone- and clay-rich soils of Salento, where constant sea breezes and abundant sunshine foster full ripeness while preserving freshness. Harvesting is typically done by hand to ensure only the healthiest, ripest bunches make it to the cellar. After gentle crushing, the must undergoes a controlled-temperature fermentation with extended maceration to extract color, flavor and tannin from the thick-skinned Negroamaro grapes. The wine is then aged in oak barrels (often French and American) to add complexity, polish the tannins and lend those characteristic notes of spice, vanilla and chocolate without overwhelming the fruit.

Food & Serving
This is a natural partner for hearty, richly flavored dishes: think slow-braised beef, lamb shanks, grilled steaks, wild boar ragù, or oven-baked pasta with ragù and aged cheeses. It also works beautifully with hard cheeses such as Parmigiano Reggiano or Pecorino, as well as charcuterie with a bit of spice. Serve at 16–18°C to let the aromas fully unfurl. Decanting for 30–60 minutes before serving is recommended, especially in its youth, to soften the tannins and bring out the wine’s aromatic complexity.

Based in the village of San Marzano di San Giuseppe in Salento, the estate works with a vast network of growers, many of whom tend old bush vines on poor, stony soils that naturally limit yields and intensify flavor.
