Tasting Notes
In the glass, the 2021 Baron Edmond shows a deep, opaque ruby colour with a youthful purple rim, hinting at both concentration and freshness. The nose is layered and sophisticated: expect notes of blackcurrant, ripe blackberry and dark cherry interwoven with graphite, cedar, tobacco leaf and subtle pencil shavings, alongside hints of violet, baking spice and fine cocoa from quality French oak. On the palate, this is full-bodied yet poised, with finely knit tannins and a silky texture that speaks to both meticulous viticulture and precise winemaking. Flavours of cassis, plum and black cherry are supported by nuances of mocha, cigar box, bay leaf and crushed rock, leading into a long, savoury finish. The acidity is vibrant but well integrated, giving the wine energy without sharpness. While already approachable with a short decant, the 2021 has excellent aging potential; under good cellaring conditions, it should evolve beautifully for 10–15 years, gaining complexity and tertiary nuances of leather, truffle and forest floor.

Production
Baron Edmond is traditionally a blend dominated by Cabernet Sauvignon, complemented by Merlot and Cabernet Franc, sourced from premium vineyard parcels on the granitic and decomposed sandstone slopes of the Simonsberg in Paarl. This elevated terroir benefits from cooling breezes and significant diurnal shifts, helping to preserve freshness and aromatic intensity in the grapes. The fruit is typically hand-harvested at optimal ripeness, with careful bunch selection both in the vineyard and at the cellar door. Vinification follows a Bordelais-inspired approach: individual parcels are fermented separately, often in stainless steel or small, temperature-controlled tanks, with gentle extraction to preserve fine tannin structure. The wine is then matured in French oak barriques, a significant proportion new, for an extended period (often around 16–18 months), before blending and bottling to achieve a harmonious, cellar-worthy cuvée.

The 2021 Rupert & Rothschild Baron Edmond is a natural partner for refined, flavourful dishes such as dry-aged ribeye, lamb racks with rosemary and garlic, beef fillet with red wine jus, or slow-braised short ribs. It also pairs beautifully with venison, truffle-infused dishes, wild mushroom ragout and mature hard cheeses like Comté or aged Gouda. Serve at 16–18°C (60–64°F) to highlight its aromatic detail and textural finesse. For current drinking, decanting for 60–90 minutes will help the wine open up, soften the tannins and release its full aromatic complexity; older bottles will need a more delicate, shorter decant to separate sediment while preserving mature aromas.
