This Grenache–Shiraz–Mataro (Mourvèdre) cuvée brings together old-vine fruit, bold Barossa richness and a fresh, contemporary edge. It’s a wine designed to deliver generous flavour, fine structure and a touch of mischief in every glass.
Tasting Notes
In the glass, the 2021 Princess of Thieves GSM shows a deep ruby core with a vibrant purple rim, hinting at youthful energy and fresh fruit intensity. The nose opens with ripe red and black berries—think raspberry, black cherry and mulberry—layered with notes of plum compote, sweet baking spice, cracked pepper and a subtle floral lift from Grenache, framed by hints of vanilla and cocoa from oak.
On the palate, it’s medium to full-bodied with velvety tannins and a generous, plush texture. Juicy flavours of dark cherry, blackberry and ripe strawberry are supported by savoury undertones of dried herbs, licorice and a gentle earthiness from Mataro. Shiraz brings depth and spice, while Grenache lifts the mid-palate with bright, succulent fruit. The finish is long, warming and well-balanced, with a fresh line of acidity keeping everything in check. Sourced from carefully selected Barossa Valley parcels, the 2021 Princess of Thieves GSM reflects the region’s classic warm, Mediterranean climate and varied soils of red clay, loam and sandy patches over ancient limestone and schist. Grenache, Shiraz and Mataro are harvested at optimal ripeness, often picked parcel by parcel to capture each variety’s ideal flavour profile and natural balance. In true RedHeads style, the fruit is handled in small lots, with gentle crushing, temperature-controlled fermentation and regular pump-overs to extract colour, flavour and supple tannins without harshness. The components are then matured in a mix of older and selected seasoned oak, allowing the blend to harmonise while preserving the bright, primary fruit character and adding subtle spice and complexity.
Food & Serving
This Barossa GSM is a versatile partner for hearty, flavourful dishes. It pairs beautifully with grilled lamb cutlets, slow-cooked beef brisket, gourmet burgers, or charcuterie and aged hard cheeses. It also works well alongside Mediterranean-inspired fare such as roasted vegetables with herbs, tomato-based stews and wood-fired pizza with cured meats. Serve at 16–18°C to highlight its balance of fruit and spice. A brief decant of 30–45 minutes helps the aromatics open up and softens the tannins, making it even more enjoyable at the table.
