From one of Bierzo’s most hallowed single parcels, the 2021 Raul Pérez Castro Ventosa Valtuille Cova de la Raposa is a refined, low‑alcohol expression of old‑vine Mencía with remarkable precision and poise. Drawn from a warm, sandy, south‑facing site that ripens early yet retains freshness in cooler vintages, it shows the quiet power and elegance that have made Raúl Pérez a benchmark name in Spanish wine. Produced in tiny quantities—only 1,200 bottles—this is a coveted bottling that captures both the village of Valtuille and the singular voice of its terroir. Its unique selling point lies in the combination of very old vines yielding only two to three clusters per plant, partial whole‑cluster fermentation, and élevage in large 500L oak barrels that respect the fruit. Tasting Notes
In the glass, the 2021 Cova de la Raposa is bright and limpid, typically showing a medium ruby hue with garnet reflections, hinting at delicacy rather than sheer power. Swirl the glass and you’ll find a lifted, aromatic profile: violets, rose petals, and wild red berries—think raspberry and redcurrant—interlace with subtle notes of blood orange zest, crushed rock, and a gentle herbal streak reminiscent of thyme and fennel frond. Delicate hints of white pepper, spice, and understated oak (light toast, a whisper of vanilla and cedar) sit in the background rather than dominating.
On the palate, this is a taut, finely etched Mencía with moderate alcohol (around 12.5%), giving it an almost Burgundian sense of tension and elegance. Production
Cova de la Raposa is a south‑facing lieu‑dit in Valtuille de Abajo, in Bierzo’s lower zone, where sandy, poor soils dominate and naturally limit vigor and yield. The old Mencía vines—typically yielding just two to three clusters per plant—dig deep into these sand‑rich soils, resulting in small, concentrated berries and a refined, mineral spine. Thanks to its exposure, this is the estate’s earliest‑ripening vineyard, a distinct advantage in the cooler 2021 vintage, allowing full phenolic ripeness at modest alcohol levels. Harvest is carried out by hand, parcel by parcel, to ensure that only perfectly ripe fruit is selected. In the cellar, around 40% whole clusters are used for the initial fermentation, bringing aromatic lift, freshness, and a fine, structural grip from the stems. Maceration lasts roughly 40 days, a long but gentle infusion that extracts nuance rather than harsh tannin. The wine is then aged for 12 months in just two 500L oak barrels, a large format that softens and polishes the wine while keeping oak influence subtle, preserving the purity of site and grape.

This elegant, medium‑bodied Bierzo red is a versatile partner at the table, particularly with dishes that echo its finesse rather than overwhelm it. Castro Ventosa is one of Bierzo’s historic estates, with documented vineyard holdings dating back to 1752, long before the region appeared on the radar of the international fine‑wine world. For generations, as with many growers in Spain, the Pérez family sold their grapes to local cooperatives, only beginning to vinify and bottle under their own label in the early 1990s. The turning point came with the vision and talent of oenologist Raúl Pérez—today one of Spain’s most acclaimed winemakers—who, together with his family, transformed Castro Ventosa into a reference point for terroir‑driven Mencía.
Based in Valtuille de Abajo, with around 60 hectares of old‑vine Mencía planted on predominantly sandy and clay soils, Castro Ventosa has been instrumental, alongside producers like Descendientes de J. Palacios, in the revival and global recognition of this indigenous variety. By focusing on low yields, optimal ripeness, and careful vineyard work, they demonstrated that Mencía can produce profound, ageworthy wines rather than simple, green or overripe reds.
