Grapes are usually hand-harvested in small parcels at optimal ripeness, with strict selection to ensure only the healthiest, most concentrated berries make it into the Großes Gewächs. In the cellar, fermentation is traditionally cool and controlled, often in stainless steel and/or large neutral German oak (Stück or Doppelstück) to retain purity of fruit while adding gentle textural depth.
